Blueberry Protein Pancakes: Blueberry pancakes are a long-held breakfast tradition. This recipe shows you how to punch it up with an extra kick of protein!

Blueberry pancakes are a long-held breakfast tradition. This recipe shows you how to punch it up with an extra kick of protein!

Ingredients:

1 scoop Building Blocks Vanilla protein powder

3 egg whites

1/2 cup old-fashioned rolled oats

1/2 medium banana

1/2 cup blueberries, fresh or frozen

2 tsp baking powder

Directions:

1. Place old-fashioned rolled oats in a blender or food processor and blend until it becomes fine flour. Remove 1 tablespoon oat flour and put in a quart-size resealable bag.

2. Add eggs, banana, protein powder, and baking powder to oat flour and pulse until smooth. Remove batter from blender or food processor and place in mixing bowl.

3. Add blueberries to bag with oat powder. Toss blueberries gently in the bag to coat them with the oat powder and then gently fold all the contents of the bag into the batter. (Tossing the blueberries with oat powder prior to mixing will help keep your batter from turning purple).

4. Place a skillet on medium-high heat and measure out ¼ cup of batter per pancake.

5. Cover the pancakes while they cook to help the inside cook faster. Cook them for about 45 seconds to 1 minute on the first side, and then about 30-45 seconds on the other side. Makes 5 four-inch diameter pancakes.
