Chocolate-Almond-Coconut Protein Bites

Chocolate, almond, coconut unite into little bites of gooey bliss while keeping it low on the sugar scale and higher on the protein side.


  • ¾ c. raisins, seedless
  • ¼ c. + 2 tbsp. raw almonds
  • 1 scoop Building Blocks Chocolate protein powder, Rx Meal Protein powder Chocolate, or Rx Plant Protein chocolate
  • 2 tbsp. semi-sweet mini chocolate chips (Enjoy Life brand)
  • ¼ c. organic shredded coconut, unsweetened


  1. 1. In a 1-cup glass measuring cup, measure out the ¾ c. raisins and pour water over the raisins until just covered. Place in microwave on high for 1 minute. Remove from microwave and reserve 2 tbsp. of the water and set aside. Pour the raisins into a colander to strain out the remaining water.
  2. 2. Combine drained raisins, almonds and reserved water in a food processor and pulse to form a paste. Add the protein powder and pulse until combined. Remove the food processor blade and use a spatula to stir in the chocolate chips. If mixture seems dry, add just a tablespoon of water at a time until a dough consistency forms.
  3. 3. Pour the shredded coconut into a shallow bowl. Scoop out 2 tablespoons of dough at a time and roll in the shredded coconut. If dough is too soft, try refrigerating for 15 minutes to stiffen it up.
  4. 4. After all dough is used up, store uneaten balls in the fridge to keep them solid. Makes 7 balls.
