The perfect soup to warm your tummy this holiday season with a hidden punch of protein!

Ingredients

  • 1 tablespoon extra-virgin olive oil
  • Salt
  • Pepper and Thyme to taste
  • 1 28-ounce can pumpkin puree (not pie filling)
  • About 1/2 lb of carrots
  • 1-3/4 cups vegetable broth
  • 1 14-ounce can light unsweetened coconut milk
  • ½ c. water
  • ½ c. Supplement Rx Plant Protein Vanilla, Building Blocks Vanilla, or Rx Meal Vanilla protein powder*

Serve each bowl with:

  • Fresh sprigs of thyme
  • Freshly ground black pepper
  • Roasted pumpkin seeds
  • A swirl of coconut cream

Directions

1. Preheat oven to 400 degrees Fahrenheit. Wash carrots and roughly chop them with the skin on. Place chopped carrots in a re-closable bag with 1 tablespoon extra-virgin olive oil and salt, pepper, and thyme to taste. Toss to coat carrots with olive oil and seasonings. Pour carrots out onto a foil-lined, rimmed jellyroll pan or lined cookie sheet. Cover with foil and roast for 30 minutes. If carrots are not yet tender, turn heat down to 375 degrees and return to oven for 10-15 more minutes until tender.

2. In a large cup, use a whisk to combine the protein powder and water.

3. Combine carrots and vegetable both into a high performance blender and begin blending. Add coconut milk in a steady stream as needed to help the carrots puree nicely.

4. Heat a large saucepan or Dutch oven over medium heat. Add the carrot puree; cook and stir for 1 minute.

5. Add the pumpkin puree and the protein-powder-water mix; cook and stir for 2 minutes.

6. Let the soup come to a gentle boil, then reduce the heat to low and simmer, uncovered, for 10 minutes.

7. Season with salt & pepper to taste. Serve each bowl with any of the additional add-ons, if desired.
