  • 1 c. chopped onion
  • 1 can (14.5-oz.) diced tomatoes
  • 1 can (7-oz.) chipotle peppers in adobo sauce, finely chopped
  • 3 Tbsp creamy peanut butter
  • 2.5 lbs boneless, skinless chicken breast
  • 2 Tbsp sesame seeds
  • 1 Tbsp garlic powder
  • 2 Tbsp chili powder
  • 1 tsp cumin
  • 1 Tbsp sugar
  • 4 scoops Building Blocks Chocolate Protein Powder
  • 12 6-inch corn tortillas
  • Sliced onions
  • Sour cream
  • Mozzarella cheese


In a 4-quart crockpot, combine onion, tomatoes, chilies, and peanut butter. In a small bowl, stir together sesame seeds, garlic powder, chili powder, cumin, sugar and protein powder. Then add to mixture in crockpot. Place chicken in sauce, turning to coat. Cover; cook on low approximately 5 hours. Remove chicken and shred. Reserve 1 cup of mole sauce (without chicken) for garnishing the enchiladas. Preheat oven to 350 degrees F. Wrap 6 tortillas at a time inside a damp paper towel and microwave for 45 seconds on high. Carefully remove from microwave (tortillas will be hot!). Working quickly, put 1/3 cup of the shredded chicken mole mixture in the center, being careful not to over fill. Roll the tortilla like a cigar to enclose the filling and place in a serving dish seam- side down. Continue to fill all of the tortillas and place them side-by- side. Pour the reserved mole over the top. Bake until sauce is bubbly and enchiladas are heated through about 20 to 25 minutes. To serve, sprinkle with a little mozzarella cheese, a drizzle of sour cream, and a few sliced onions. Makes about 12 enchiladas.
