Vanilla Building Blocks Protein hides among cranberries, apples, bell peppers, celery and pecans to create a satisfying crunch between two pieces of bread or on a bed of lettuce!

Ingredients:

  • 2.5 lbs boneless, skinless chicken breast.
  • ½ c. light mayonnaise.
  • ½ c. reduced-fat sour cream.
  • ¼ c. Dijon mustard.
  • 2 scoops Building Blocks Vanilla Protein.
  • ¼ c. dried cranberries.
  • 1 c. diced red apples.
  • ¼ c. chopped green onions.
  • ½ c. chopped green bell pepper.
  • ½ c. chopped celery.
  • ½ c. chopped pecans.
  • Salt & pepper to taste.

Directions:

Fill a medium stockpot with water and bring to a boil. Add chicken breast and boil until tender, about 20 minutes. Drain and cool chicken, then cut into small cubes.

In medium mixing bowl, combine mayonnaise, sour cream, Dijon mustard, and Building Blocks Vanilla protein powder. Mix thoroughly. Add cooled and cubed chicken and the remaining ingredients to the bowl and mix. Serve on a bed of lettuce, as a side dish, or between two slices of whole wheat bread for a protein-packed sandwich. Makes approximately 12 servings 2/3 cup each.
